Growing up, I would spend a lot of time at my grandparent's house. Like most Cajun homes, they would cook for every meal of the day. I always remember their food being full of flavor and spice but never too salty. That’s because my PawPaw made his own seasoning. Once a year, he would make a batch for the entire family. At each family member’s house we went to, we would ask, “Do you have some Pawpaw’s?” As a kid, I thought this was the most amazing thing ever. Each house would base their cooking on if they had enough of Pawpaw’s seasoning to cook or add to a meal. It was a reminder of family. As I grew up, I would tell him all the time, “There will be a day that I continue to make your recipe and share it with everyone!” Now, I have recreated it and named it “Pawpaw’s Creole Seasoning”. I looked up to my PawPaw and everything he stood for. He passed in 2016, and this is my way of carrying on his legacy.
